- 8-10 large green chilies

- 2 tablespoons oil
- Fresh coriander leaves for garnishing
Instructions:
- Prepare the Chilies:
- Wash the green chilies and pat them dry. Slit each chili lengthwise without cutting them into halves. Remove the seeds if you prefer less heat.
- Cook the Chilies:
- Heat oil in a pan over medium heat. Add the slit green chilies and sauté them for 2-3 minutes until they start to blister. Remove the chilies from the pan and keep them aside.
- Prepare the Gravy:
- In the same pan, add more oil if needed. Add cumin seeds and let them crackle.
- Add chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and sauté for another minute until the raw smell disappears.
- Add chopped tomatoes and cook until they turn mushy and oil starts to separate.

- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
