Making North Indian home-style Aloo Masala Poori is a delightful process, and it’s perfect for a hearty breakfast or a satisfying dinner. Here’s a simple recipe for you:

Ingredients:
For Aloo Masala:
- 3-4 medium-sized potatoes, boiled, peeled, and mashed
- 1 large onion, finely chopped
- 2-3 green chilies, finely chopped (adjust according to your spice preference)
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- Cooking oil
For Poori:
- 1 cup whole wheat flour (atta)
- Water, as required
- Salt to taste
- Oil for deep frying
Instructions:
Making Aloo Masala:
- Heat oil in a pan or kadhai over medium heat. Add cumin seeds and mustard seeds. Let them splutter.
- Add chopped onions and green chilies. Sauté until onions turn golden brown.
- Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add turmeric powder, coriander powder, and garam masala. Mix well and cook for a minute.
- Add the mashed potatoes and salt. Mix everything thoroughly.
- Cook the potato mixture for 5-7 minutes, stirring occasionally. Once done, turn off the heat and garnish with chopped coriander leaves.
Making Poori:
- In a mixing bowl, take whole wheat flour (atta) and add salt to it. Mix well.
- Gradually add water and knead into a stiff yet smooth dough. Let it rest for 15-20 minutes, covered with a damp cloth.
- Divide the dough into small lemon-sized balls.
- Roll each dough ball into a small circle of about 3-4 inches in diameter.
- Heat oil for deep frying in a kadhai or deep pan over medium heat.
- Once the oil is hot, carefully slide one rolled poori into the hot oil.
- Press the poori gently with a slotted spoon. This will help it to puff up.
- Once it puffs up and turns golden brown, flip it to the other side and fry until golden brown.
- Remove the fried poori from the oil and drain excess oil on paper towels.
- Repeat the same with the remaining dough balls.
Serving:
Serve the hot and crispy pooris with the delicious aloo masala. It pairs well with some pickle, yogurt, or even with a side of green chutney. Enjoy your North Indian home-style Aloo Masala Poori!
