Making North Indian home-style Aloo Masala Poori is a delightful process, and it’s perfect for a hearty breakfast or a satisfying dinner. Here’s a simple recipe for you:

Ingredients:

For Aloo Masala:

  • 3-4 medium-sized potatoes, boiled, peeled, and mashed
  • 1 large onion, finely chopped
  • 2-3 green chilies, finely chopped (adjust according to your spice preference)
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
  • Cooking oil

For Poori:

  • 1 cup whole wheat flour (atta)
  • Water, as required
  • Salt to taste
  • Oil for deep frying

Instructions:

Making Aloo Masala:

  • Heat oil in a pan or kadhai over medium heat. Add cumin seeds and mustard seeds. Let them splutter.
  • Add chopped onions and green chilies. Sauté until onions turn golden brown.
  • Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
  • Add turmeric powder, coriander powder, and garam masala. Mix well and cook for a minute.
  • Add the mashed potatoes and salt. Mix everything thoroughly.
  • Cook the potato mixture for 5-7 minutes, stirring occasionally. Once done, turn off the heat and garnish with chopped coriander leaves.

Making Poori:

  • In a mixing bowl, take whole wheat flour (atta) and add salt to it. Mix well.
  • Gradually add water and knead into a stiff yet smooth dough. Let it rest for 15-20 minutes, covered with a damp cloth.
  • Divide the dough into small lemon-sized balls.
  • Roll each dough ball into a small circle of about 3-4 inches in diameter.
  • Heat oil for deep frying in a kadhai or deep pan over medium heat.
  • Once the oil is hot, carefully slide one rolled poori into the hot oil.
  • Press the poori gently with a slotted spoon. This will help it to puff up.
  • Once it puffs up and turns golden brown, flip it to the other side and fry until golden brown.
  • Remove the fried poori from the oil and drain excess oil on paper towels.
  • Repeat the same with the remaining dough balls.

Serving:
Serve the hot and crispy pooris with the delicious aloo masala. It pairs well with some pickle, yogurt, or even with a side of green chutney. Enjoy your North Indian home-style Aloo Masala Poori!
