How to Cook South Indian Home Style Suji Appe

Suji Appe, South Indian snack, is made from semolina (rava) batter mixed with yogurt and seasoned with a blend of spices. These round, savory dumplings are cooked in a special appe pan until golden brown and crispy on the outside, with a soft and fluffy texture inside. Enjoy them as a tasty breakfast, snack, or appetizer, paired perfectly with coconut chutney or spicy tomato chutney.

Suji Appe, also known as Rava Appe or Semolina Appe, is a popular South Indian snack made from semolina (sooji or rava). Here’s a simple recipe for making Suji Appe in South Indian home style:

Ingredients:

  • 1 cup semolina (rava or sooji)
  • 1/2 cup yogurt
  • 1/2 cup water
  • 1 small onion, finely chopped
  • 1 small carrot, grated
  • 1/4 cup frozen peas (optional)
  • 1-2 green chilies, finely chopped
  • 1/2 inch ginger, grated
  • 1 tablespoon chopped coriander leaves
  • Salt to taste
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon baking soda
  • 1 tablespoon oil

Instructions:

  • Prepare the Batter:
  • In a mixing bowl, combine semolina, yogurt, and water. Mix well to form a thick batter. Let it rest for 15-20 minutes.
  • Prepare the Vegetables:
  • Heat oil in a small pan. Add mustard seeds and let them splutter.
  • Add cumin seeds and sauté for a few seconds.
  • Add chopped onion, green chilies, and grated ginger. Sauté until onions turn translucent.
  • Add grated carrot and peas (if using). Sauté for 2-3 minutes. Turn off the heat and let the mixture cool down.
  • Combine Batter and Vegetables:
  • Once the vegetable mixture has cooled down, add it to the semolina batter.
  • Add chopped coriander leaves and salt. Mix everything well.
  • Prepare the Appe Pan:
  • Heat an appe pan (also known as paniyaram pan) on medium heat.
  • Grease each mold of the pan with a little oil.
  • Make the Appe:
  • Just before making the appe, add baking soda to the batter and mix well. The batter will become slightly frothy.
  • Pour spoonfuls of the batter into each mold of the appe pan, filling them up to 3/4th of the mold.
  • Cook the Appe:
  • Cover the pan and let the appe cook on medium-low heat for 2-3 minutes.
  • After a couple of minutes, remove the lid and check the underside of the appe. Once it turns golden brown, flip them using a skewer or spoon.
  • Cook the other side for another 2-3 minutes until it turns golden brown and crispy.
  • Serve:
  • Once both sides are cooked and crisp, remove the appe from the pan.
  • Serve hot with coconut chutney, tomato chutney, or any other chutney of your choice.
