North Indian Tawa Pulao is a delicious and flavorful rice dish made on a tawa or griddle. Here’s a simple recipe for cooking North Indian home-style Tawa Pulao:
Ingredients:
- 2 cups basmati rice, cooked and cooled
- 1 large onion, finely chopped
- 1 large tomato, finely chopped
- 1 medium-sized bell pepper (capsicum), finely chopped
- 1 cup mixed vegetables (carrots, peas, beans), finely chopped
- 2-3 green chilies, finely chopped (adjust according to your spice preference)
- 2 tablespoons oil or ghee
- 1 teaspoon cumin seeds
- 1 teaspoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves, chopped for garnishing
- Lemon wedges for serving
Instructions:
- Preparation:
- Cook the basmati rice until it’s fully cooked but not mushy. Let it cool down completely and then fluff it gently with a fork to separate the grains.
- Chop all the vegetables finely and keep them ready.
- Cooking:
- Heat oil or ghee in a large tawa or flat pan over medium heat.
- Add cumin seeds and let them splutter.
- Add finely chopped onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw smell disappears.
- Add the finely chopped tomatoes and cook until they turn soft and mushy.
- Now, add the chopped mixed vegetables and bell peppers. Stir well and cook for 5-7 minutes until the vegetables are tender but still have a crunch.
- Sprinkle red chili powder, turmeric powder, garam masala, and salt. Mix well and cook for another 2-3 minutes.
- Add the cooked and cooled basmati rice to the tawa. Gently mix everything together until the rice is well coated with the masala and vegetables. Be careful not to break the rice grains.
- Cook for another 5 minutes on low heat, stirring occasionally, allowing the flavors to blend together.
- Finally, garnish with freshly chopped coriander leaves.
- Serving:
- Serve the Tawa Pulao hot with lemon wedges on the side. Squeezing some fresh lemon juice on the pulao enhances its flavor.
Enjoy your delicious North Indian Tawa Pulao!
