Ingredients:
- 1 cup chana dal (split chickpeas)
- 1 cup sugar
- 1/2 cup ghee (clarified butter)
- 4-5 green cardamom pods, crushed or powdered
- A pinch of saffron strands (optional)
- Assorted nuts like almonds, cashews, and pistachios, chopped
- Water
Instructions:
- Soaking Chana Dal:
- Rinse the chana dal thoroughly under running water until the water runs clear.
- Soak the chana dal in water for about 4-5 hours. This helps in softening the dal.
- Cooking Chana Dal:
- After soaking, drain the water from the chana dal.
- In a pressure cooker, add the soaked chana dal and enough water to cover it.
- Pressure cook the dal until it becomes soft and mushy. It may take about 2-3 whistles on medium flame.
- Once cooked, mash the dal using a spoon or masher. Keep it aside.
- Making Sugar Syrup:
- In a separate pan, add sugar and water (equal parts) to make a syrup.
- Cook the sugar syrup on medium heat until it reaches a one-string consistency. Stir occasionally.
- Preparing the Halwa:
- Heat ghee in a heavy-bottomed pan or kadhai.
- Add the mashed chana dal to the pan and cook it in ghee on low to medium heat.
- Keep stirring continuously to prevent it from sticking to the bottom.
- After a few minutes, add the sugar syrup to the dal mixture. Be careful as it may splutter.
- Stir well and continue cooking until the halwa thickens and starts leaving the sides of the pan.
- Add crushed cardamom and saffron strands for flavor. Mix well.
- Garnishing:
- Add chopped nuts (almonds, cashews, pistachios) to the halwa.
- Mix them well and cook for another few minutes.
- Serving:
- Once the halwa reaches the desired consistency and aroma, remove it from the heat.
- Serve the chana dal halwa hot or warm, garnished with more nuts if desired.
