Ingredients:
- 1 cup whole wheat flour (atta)
- 1/2 cup yellow moong dal (split yellow gram)
- 1 small onion, finely chopped
- 2 green chilies, finely chopped
- 2 tablespoons coriander leaves, finely chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon cumin seeds
- Salt to taste
- Oil for deep frying
- Water as needed
Instructions:
Preparing Moong Dal:
- Rinse the moong dal thoroughly and soak it in water for at least 2 hours.
- After soaking, drain the water from the dal and grind it into a coarse paste without adding any water.
Making the Dough:
- In a mixing bowl, combine the whole wheat flour, ground moong dal paste, chopped onion, green chilies, coriander leaves, turmeric powder, red chili powder, cumin seeds, and salt.
- Mix everything well and knead into a smooth dough. If the dough is too dry, add a little water to make it pliable.
- Let the dough rest for about 15-20 minutes, covered with a damp cloth.
Shaping and Frying Pooris:
- Heat oil in a deep frying pan or kadhai over medium heat.
- Pinch a small portion of the dough and roll it into a ball between your palms. Then, flatten it slightly.
- Roll out the dough ball into a small circle, about 3-4 inches in diameter, using a rolling pin. Ensure the thickness is uniform.
- Once the oil is hot, gently slide the rolled poori into the hot oil.
- Fry the poori until it puffs up and turns golden brown on both sides, gently flipping it once or twice. It should take about 2-3 minutes per poori.
- Once fried, remove the poori from the oil using a slotted spoon and place it on a plate lined with paper towels to drain excess oil.
- Repeat the process with the remaining dough, rolling and frying pooris in batches.
Serving:
- Serve the Moong Masala Pooris hot with your favorite side dish such as potato curry, chole (chickpea curry), or any other curry of your choice.
- They can also be enjoyed with yogurt, pickle, or chutney.
