Ingredients:
- For the dough:
- 2 cups whole wheat flour (atta)
- Water, as needed
- Salt, to taste
- For the filling:
- 2 cups finely grated cauliflower (gobhi)
- 1 small onion, finely chopped
- 2 green chilies, finely chopped (adjust according to taste)
- 1/2 teaspoon grated ginger
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon garam masala
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/4 teaspoon turmeric powder
- Salt, to taste
- Fresh coriander leaves, chopped (optional)
- Ghee or oil for frying
Instructions:
Preparing the Dough:
- In a large mixing bowl, add whole wheat flour and salt. Gradually add water and knead to form a soft dough. Cover and set aside while you prepare the filling.
Making the Filling:
- Heat a little oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn translucent.
- Add grated cauliflower, green chilies, ginger, and salt. Mix well.
- Cook the cauliflower mixture until it’s soft and the moisture evaporates. Stir occasionally.
- Add garam masala, red chili powder, turmeric powder, and chopped coriander leaves (if using). Mix everything well and cook for another minute. Remove from heat and let it cool.
Making the Parathas:
- Divide the dough into equal-sized balls. Take one dough ball and roll it out into a small circle, about 4-5 inches in diameter, using a rolling pin and some dry flour to prevent sticking.
- Place a spoonful of the prepared cauliflower filling in the center of the rolled-out dough circle.
- Gather the edges of the dough and pinch them together to seal the filling inside.
- Flatten the filled dough ball with your hands and then roll it out gently again into a larger circle, about 6-7 inches in diameter.
- Heat a griddle or tawa over medium-high heat. Once hot, place the rolled-out paratha on the griddle.
- Cook until brown spots appear on one side, then flip the paratha and cook the other side until brown spots appear.
- Apply ghee or oil on both sides of the paratha and cook until it’s crispy and golden brown.
- Repeat the process with the remaining dough balls and filling.
- Serve hot with yogurt, pickle, or any chutney of your choice.
