Thecha is a traditional Maharashtrian dish known for its spicy flavor. It’s typically made with green chilies, garlic, and peanuts, and it pairs wonderfully with Bhakri (a type of flatbread) or even with regular Roti and Paratha . Here’s a simple recipe to make home-style Maharashtrian Thecha:

Ingredients:
- 10-12 fresh green chilies (adjust according to your spice tolerance)
- 8-10 cloves of garlic
- 1/4 cup roasted peanuts
- 1 tablespoon oil
- Salt to taste
- A pinch of asafoetida (hing) (optional)
- Fresh coriander leaves for garnish (optional)
Instructions:
- Preparation:
- Remove the stems from the green chilies.
- Peel the garlic cloves.
- If the peanuts are not roasted, dry roast them in a pan until they turn golden brown. Allow them to cool.
- Grinding:
- In a blender or mortar and pestle, coarsely grind the green chilies, garlic cloves, and roasted peanuts together. You can adjust the coarseness according to your preference.
- Making Thecha:
- Heat oil in a pan on medium heat.
- Add a pinch of asafoetida (hing) to the oil (if using) for added flavor.
- Once the oil is hot, add the ground chili-garlic-peanut mixture to the pan.
- Stir continuously and cook for about 5-7 minutes until the mixture turns aromatic and the raw smell of garlic disappears. Be careful as the mixture may splutter.
- Add salt to taste and mix well.
- Cook for another minute, then turn off the heat.
- Garnish and Serve:
- Garnish with fresh coriander leaves if desired.
- Serve Thecha with bhakri or any other flatbread of your choice. It also goes well with steamed rice or as a side dish with dal and rice.
Tips:
- You can adjust the spiciness of Thecha by increasing or decreasing the number of green chilies.
- For a smoky flavor, you can roast the green chilies and garlic cloves before grinding them.
- Some variations of Thecha include adding grated coconut or chopped onions. Feel free to experiment with different ingredients according to your taste preferences.
Enjoy your homemade Maharashtrian Thecha!
