Ingredients:
- 1 cup semolina (rava or sooji)
- 1/2 cup yogurt
- 1/2 cup water
- 1 small onion, finely chopped
- 1 small carrot, grated
- 1/4 cup frozen peas (optional)
- 1-2 green chilies, finely chopped
- 1/2 inch ginger, grated
- 1 tablespoon chopped coriander leaves
- Salt to taste
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon baking soda
- 1 tablespoon oil
Instructions:
- Prepare the Batter:
- In a mixing bowl, combine semolina, yogurt, and water. Mix well to form a thick batter. Let it rest for 15-20 minutes.
- Prepare the Vegetables:
- Heat oil in a small pan. Add mustard seeds and let them splutter.
- Add cumin seeds and sauté for a few seconds.
- Add chopped onion, green chilies, and grated ginger. Sauté until onions turn translucent.
- Add grated carrot and peas (if using). Sauté for 2-3 minutes. Turn off the heat and let the mixture cool down.
- Combine Batter and Vegetables:
- Once the vegetable mixture has cooled down, add it to the semolina batter.
- Add chopped coriander leaves and salt. Mix everything well.
- Prepare the Appe Pan:
- Heat an appe pan (also known as paniyaram pan) on medium heat.
- Grease each mold of the pan with a little oil.
