Ingredients:
- 1 large eggplant (baingan)

Instructions:
- Roast the Eggplant:
- Roast the eggplant over an open flame or in a preheated oven until the skin is charred and the flesh becomes soft. If using an open flame, turn the eggplant occasionally to ensure even cooking. This process can take around 10-15 minutes.
- Cool and Peel:
- Let the roasted eggplant cool. Once cooled, peel off the charred skin and mash the pulp using a fork or your hands. Discard the stem.
- Prepare the Masala:
- Heat oil or ghee in a pan. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn translucent.
- Add minced garlic, grated ginger, and green chilies. Sauté for another 2-3 minutes until the raw smell disappears.
- Add chopped tomatoes and cook until they turn mushy and oil starts separating from the masala.
- Add Spices:
- Now, add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for another 2-3 minutes.
- Combine with Eggplant:
- Add the mashed eggplant to the masala mixture. Mix everything well and cook for 5-7 minutes on low heat, stirring occasionally, to allow the flavors to blend.
- Finish and Serve:
- Garnish the Baingan ka Bharta with freshly chopped coriander leaves.
