Chana dal cutlets are a tasty and nutritious snack made from split chickpeas (chana dal). These cutlets are flavorful, crispy on the outside, and soft on the inside. Here’s a recipe for chana dal cutlets:

Ingredients:

  • 1 cup Cana Dal (chana dal)
  • 2 medium-sized potatoes, boiled and mashed
  • 1 medium-sized onion, finely chopped
  • 2-3 green chilies, finely chopped (adjust according to taste)
  • 2-3 garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves, chopped
  • Bread crumbs for coating
  • Oil for shallow frying

Instructions:

  • Preparation of Cana Dal:
  • Wash the Cana Dal thoroughly and soak it in water for about 3-4 hours.
  • After soaking, drain the water completely.
  • Cooking Cana Dal:
  • In a pressure cooker, add the soaked and drained Cana Dal along with fresh water.
  • Pressure cook for about 2-3 whistles or until the dal is soft and cooked.
  • Once cooked, drain any excess water and let the dal cool down.
  • Making the Cutlet Mixture:
  • In a mixing bowl, mash the cooked Cana Dal.
  • Add mashed potatoes, finely chopped onion, green chilies, minced garlic, grated ginger, cumin seeds, coriander powder, turmeric powder, garam masala, salt, and chopped coriander leaves.
  • Mix all the ingredients well to form a uniform mixture. Adjust seasoning if required.
  • Shaping the Cutlets:
  • Take a portion of the mixture and shape it into a small round or oval-shaped cutlet.
  • Repeat the process with the remaining mixture to make more cutlets.
  • Coating:
  • Spread some bread crumbs on a plate.
  • Gently coat each cutlet with bread crumbs, ensuring they are evenly coated.
  1. Frying:
  • Heat oil in a pan for shallow frying.
  • Once the oil is hot, carefully place the cutlets into the pan.
  • Fry the cutlets until they turn golden brown and crisp on both sides.
  • Once done, remove the cutlets from the pan and place them on a kitchen towel to absorb any excess oil.
  • Serving:
  • Serve the Cana Dal cutlets hot with your favorite chutney or sauce.
