Ingredients:

  • 1 cup bajra flour (pearl millet flour)
  • 1/2 cup whole wheat flour (atta)
  • 1/4 cup finely chopped onions
  • 2 green chilies, finely chopped
  • 1/4 cup chopped coriander leaves
  • 1/2 teaspoon ajwain (carom seeds)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Water as needed
  • Oil for deep frying

Instructions:

Making the Dough:

  1. In a mixing bowl, combine the bajra flour, whole wheat flour, chopped onions, green chilies, coriander leaves, ajwain, turmeric powder, red chili powder, and salt.
  2. Mix everything well and knead into a smooth dough. If the dough is too dry, add a little water to make it pliable.
  3. Let the dough rest for about 15-20 minutes, covered with a damp cloth.

Shaping and Frying Pooris:

  1. Heat oil in a deep frying pan or kadhai over medium heat.
  2. Pinch a small portion of the dough and roll it into a ball between your palms. Then, flatten it slightly.
  3. Roll out the dough ball into a small circle, about 3-4 inches in diameter, using a rolling pin. Ensure the thickness is uniform.
  4. Once the oil is hot, gently slide the rolled poori into the hot oil.
  5. Fry the poori until it puffs up and turns golden brown on both sides, gently flipping it once or twice. It should take about 2-3 minutes per poori.
  6. Once fried, remove the poori from the oil using a slotted spoon and place it on a plate lined with paper towels to drain excess oil.
  7. Repeat the process with the remaining dough, rolling and frying pooris in batches.

Serving:

  1. Serve the Bajra Pooris hot with your favorite side dish such as potato curry, chole (chickpea curry), or any other curry of your choice.
  2. They can also be enjoyed with yogurt, pickle, or chutney.
