North Indian home-style Moong Masala Poori is a delightful dish to try! Here’s a simple recipe to guide you through the process. Indulge in the flavorful delight of North Indian Moong Masala Poori, a crispy and aromatic fried bread infused with savory moong dal, onions, and spices. Perfect with your favorite curry or chutney.

Ingredients:

  • 1 cup whole wheat flour (atta)
  • 1/2 cup yellow moong dal (split yellow gram)
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped
  • 2 tablespoons coriander leaves, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon cumin seeds
  • Salt to taste
  • Oil for deep frying
  • Water as needed

Instructions:

Preparing Moong Dal:

  1. Rinse the moong dal thoroughly and soak it in water for at least 2 hours.
  2. After soaking, drain the water from the dal and grind it into a coarse paste without adding any water.

Making the Dough:

  1. In a mixing bowl, combine the whole wheat flour, ground moong dal paste, chopped onion, green chilies, coriander leaves, turmeric powder, red chili powder, cumin seeds, and salt.
  2. Mix everything well and knead into a smooth dough. If the dough is too dry, add a little water to make it pliable.
  3. Let the dough rest for about 15-20 minutes, covered with a damp cloth.

Shaping and Frying Pooris:

  1. Heat oil in a deep frying pan or kadhai over medium heat.
  2. Pinch a small portion of the dough and roll it into a ball between your palms. Then, flatten it slightly.
  3. Roll out the dough ball into a small circle, about 3-4 inches in diameter, using a rolling pin. Ensure the thickness is uniform.
  4. Once the oil is hot, gently slide the rolled poori into the hot oil.
  5. Fry the poori until it puffs up and turns golden brown on both sides, gently flipping it once or twice. It should take about 2-3 minutes per poori.
  6. Once fried, remove the poori from the oil using a slotted spoon and place it on a plate lined with paper towels to drain excess oil.
  7. Repeat the process with the remaining dough, rolling and frying pooris in batches.

Serving:

  1. Serve the Moong Masala Pooris hot with your favorite side dish such as potato curry, chole (chickpea curry), or any other curry of your choice.
  2. They can also be enjoyed with yogurt, pickle, or chutney.
