Atte ka Halwa, also known as Wheat Halwa, is a delicious and comforting Indian dessert made from whole wheat flour, ghee (clarified butter), sugar, and water. Here’s a simple recipe to make Atte ka Halwa:

Ingredients:

  • 1 cup whole wheat flour (atta)
  • 1/2 cup ghee (clarified butter)
  • 1 cup sugar
  • 2 cups water
  • 1/4 teaspoon cardamom powder
  • Chopped nuts (optional, for garnish)

Instructions:

  1. Heat the ghee in a heavy-bottomed pan or kadhai over medium heat.
  2. Once the ghee is hot, add the whole wheat flour (atta) to the pan.
  3. Roast the flour in the ghee, stirring constantly, until it turns golden brown and aromatic. This step is crucial to ensure that the raw taste of the flour disappears and the halwa gets a nice roasted flavor. Be careful not to burn the flour; keep the heat on medium-low and continue stirring.
  4. In a separate saucepan, heat the water and sugar together until the sugar dissolves completely, creating a sugar syrup. You don’t need to achieve any particular consistency for the syrup; just make sure the sugar is fully dissolved.
  5. Once the flour is roasted to a golden brown color, carefully pour the sugar syrup into the pan with the roasted flour. Be cautious as the mixture might splutter.
  6. Stir continuously to combine the sugar syrup and flour mixture thoroughly, breaking any lumps that form.
  7. Cook the halwa over medium-low heat, stirring frequently, until it thickens and starts to leave the sides of the pan. This may take around 10-15 minutes.
  8. Once the halwa reaches the desired consistency and the ghee starts to separate from the mixture, add cardamom powder and mix well to incorporate the flavor.
  9. Turn off the heat and transfer the Atte ka Halwa to a serving dish.
  10. Garnish with chopped nuts like almonds, cashews, or pistachios if desired.
  11. Serve warm and enjoy this delightful Indian dessert!

Note: Adjust the amount of sugar according to your preference for sweetness. You can also customize the recipe by adding saffron strands for additional flavor and color.
