How to Cook North India Home-Style Lauki Paratha

Ingredients:

  • 2 cups whole wheat flour (atta)
  • 1 cup grated bottle gourd (lauki)
  • 1 small onion, finely chopped (optional)
  • 2-3 green chilies, finely chopped (adjust according to taste)
  • 1 teaspoon grated ginger
  • 2 tablespoons chopped fresh coriander leaves
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust according to taste)
  • Salt to taste
  • Ghee or oil for cooking

Instructions:

  1. Prepare the Dough:
  • In a mixing bowl, combine the whole wheat flour, grated bottle gourd, chopped onions (if using), green chilies, grated ginger, chopped coriander leaves, cumin seeds, turmeric powder, red chili powder, and salt.
  • Knead the mixture into a soft dough, adding water as needed. The grated bottle gourd will release moisture, so start by adding a little water and adjust as necessary.
  • Let the dough rest for about 15-20 minutes covered with a damp cloth.
  1. Divide and Roll:
  • After resting, divide the dough into equal-sized portions and roll them into balls.
  • Take one dough ball and roll it out into a small circle (approximately 6-7 inches in diameter) using a rolling pin and some dry flour for dusting.
  1. Cooking the Paratha:
  • Heat a tawa (griddle) or a non-stick skillet over medium heat.
  • Once the tawa is hot, carefully place the rolled-out paratha onto it.
  • Cook the paratha for about a minute until you see bubbles forming on the surface.
  • Flip the paratha and cook the other side.
  • Spread a little ghee or oil on the surface of the paratha and around the edges.
  • Press the edges gently with a spatula to ensure even cooking.
  • Cook until both sides are golden brown and crisp, adding more ghee or oil if necessary.
  • Repeat the same process for the remaining dough balls.
  1. Serving:
  • Serve the lauki parathas hot with your favorite accompaniments such as yogurt, pickle, or chutney.
  • They also pair well with a side of dal (lentil curry) or any curry of your choice.
