Ingredients:

  • 1 cup dried Lobiya (black-eyed peas), soaked overnight
  • 1 tablespoon oil (mustard oil or any cooking oil of your choice)
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 green chili, finely chopped (adjust according to your spice preference)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust according to your spice preference)
  • Salt to taste
  • 4 cups water or vegetable broth
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving (optional)

Instructions:
