Ingredients:

  • 200 grams paneer, cubed

  • 1/4 cup cashew nuts, soaked in warm water for 15 minutes
  • 1/4 cup cream
  • 2 tablespoons ghee or butter
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon dried fenugreek leaves (kasuri methi)
  • Salt to taste
  • 1 tablespoon honey or sugar (optional)
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare Cashew Paste:
  • Drain the soaked cashew nuts and blend them into a smooth paste. Set aside.
  1. Fry Paneer:
  • Heat 1 tablespoon of ghee or butter in a pan over medium heat.
  • Add the paneer cubes and fry them until golden brown. Remove and set aside.
  1. Make Onion Paste:
  • In the same pan, add another tablespoon of ghee or butter.
  • Add the chopped onions and sauté until they turn golden brown.

  • Heat the remaining ghee or butter in the same pan.
  • Add cumin seeds and let them splutter.
  • Add ginger-garlic paste and sauté until fragrant.
  • Pour in the onion paste and cook for a few minutes until it thickens slightly.
  • Add tomato puree and cook until the oil separates from the mixture.
  1. Add Spices:
  • Stir in red chili powder, turmeric powder, garam masala, and salt. Mix well.
  1. Add Cashew Paste and Cream:
  • Add the cashew paste to the gravy and mix thoroughly.
  • Pour in the cream and stir until well combined.
  1. Simmer and Add Paneer:
  • Let the gravy simmer for a few minutes until it thickens to your desired consistency.
  • Add the fried paneer cubes to the gravy and gently mix to coat them with the sauce.

  • Crush the dried fenugreek leaves between your palms and sprinkle them over the Shahi Paneer.
  • Optionally, add honey or sugar for a touch of sweetness.
  • Garnish with freshly chopped coriander leaves.
